Cracker Crust: Handling Instructions

Remove crust from package and place on wire rack or pizza pan. Let crusts fully thaw (about 30 mins). Top with favourite toppings and place in pre-heated oven at 500-550 degrees until cheese is melted and crust is bubbling and golden brown. Remove and enjoy!

Shelf Life: Frozen 3 months Cooler 2 days (do not re-freeze)

Regular Rise Crust: Handling Instructions

Remove desired number of crusts from freezer, cover and place in cooler 12-24hrs prior to use.  When ready for use remove from cooler and place covered on prep table and allow to rise for approximately 30 minutes (this will vary based on warmth of environment).  Dress with favourite toppings and cook in pre-heated oven at 450-475 degrees Fahrenheit for 10-12 minutes.

If removing crust directly from the freezer for use, 45 minutes to an hour will be required for the dough to warm and rise before use.
Note: Crusts are safe to use from cooler up to 48hrs.

Par Baked Crusts: Handling Instructions

Pre-heat oven to 400 degrees, separate and thaw desired number of crusts. Lightly brush baking pan or pizza pan with oil and place crusts on pan. Dress with desired toppings and place in oven on middle rack for approximately 9 minutes. Turn oven to broil and finish pizza for 2 minutes or until cheese is fully melted and crust is golden brown. Remove and enjoy!

Dough Balls: Handling Instructions

Keep frozen until one day prior to use. Place desired number of dough balls on a lightly oiled baking pan, brush each ball lightly with oil and cover with plastic film to prevent drying. Place in cooler for up to two days. Upon thawing and at least one hour prior to use (2 hours for larger dough balls) remove dough balls from cooler, keep covered and allow to come to room temperature before forming. They should be soft and pillowy.

Domestic: Remove desired number of croissants from freezer and place on baking sheet. Cover with slightly moist tea towel and allow to rise for 4-6 hours. When ready croissants should be approximately 3 times their frozen size and be soft and pillowy. Place in pre-heated oven at 375 degrees for 15-20 minutes.

Commercial: Remove desired number of croissants from freezer and place on baking sheet to thaw. Once fully thawed put in proofer for your standard time. Remove and bake to a golden brown.
